Here's what you'll need:
1 dry aged rib eye
salt and pepper
2 tablespoon butter
1 bunch asparagus, stems removed
2 sweet potatoes peeled and chopped
Here's what to do:
Season rib eye with salt and pepper
Let sit on counter, covered, for 1/2 half hour
Boil potatoes for 8 minutes or until soft.
Sear both sides of steak for 2 minutes each at the front of the grill.
Turn the front of the grill off.
Cook steak until thermometer reads 135.
Remove steak to a serving dish and place 2 tablespoons butter on to of steak and tent with foil.
While steak rests for 5 minutes, steam asparagus in boiling water.
Serve the potatoes and asparagus with butter and salt and pepper.
