Avocado Tomato Salad

Avocados are very healthy for HubbyHubby.  This is a great quick and easy summer salad to accompany any meal.
What you'll need:

1 Cup cherry tomatoes halved
1 Avocado scooped out and roughly chopped
1 Roasted beats cut into bite size pieces
1/2 Cucumber peeled and sliced
1/2 Carrots thinly sliced or shredded

Optional add ons:
Sunflower seeds
Goji berries
Pecans or cashews

Mix all veggies together and drizzle with olive oil, vinegar, Herbamare and pepper to taste.  Enjoy and be in health.
